Masque, Mumbai
Founded by Prateek Sadhu and Aditi Dugar in 2016, Masque is a trailblazer in India’s fine dining space. Currently helmed by Chef Varun Totlani, the restaurant is known for its innovative 10-course tasting menu, featuring highlights like Kashmiri morels with patra and barbecued pork or peas stuffing.
Masque is also home to The Masque Lab, a 1,250-square-foot research space dedicated to studying ingredient aging, flavor fusion, and culinary innovation.
Indian Accent, New Delhi
Founded in 2009 by Rohit Khattar and led by Chef Manish Mehrotra, Indian Accent has consistently ranked among India’s best restaurants. Known for its modern take on Indian cuisine, the restaurant’s must-try dishes include Puchkas with Calcutta Jhal Potato and Five Waters, Potato Sphere Chaat with White Pea Ragda, and Meetha Aachar Spare Ribs with Sour Green Apple.
It also offers a signature bread selection, featuring wild mushroom kulcha with truffle oil and jalapeno roti. Indian Accent has received global recognition, even making it to TIME Magazine’s 100 Greatest Places in the World. In 2023, it expanded with a new outlet at Mumbai’s Nita Mukesh Ambani Cultural Centre.
Avartana, Chennai
Opened in 2017, Avartana is a contemporary South Indian fine dining restaurant, headed by Chef Nikhil Nagpal. Known for blending traditional flavors with modern cooking techniques, its signature dishes include beetroot with curd cheese, cuttlefish with black garlic and coconut, and chargrilled pork belly with steamed tapioca.
Avartana’s visually stunning desserts, such as fennel panna cotta egg, served in a bird’s nest and cracked open with a mini hammer, have also gained widespread attention. The restaurant’s decor is inspired by Southern Indian culture, featuring banana leaf motifs and intricate designs.
