  • Carrots (Gajar): 1 kg, peeled and chopped/grated

  • Ghee: 2 tbsp

  • Milk: ¾ cup

  • Dates: 10–15, soaked in ½ cup warm milk

  • Dry Fruits: A handful (almonds, cashews, raisins, pistachios)


How to Make Gajar Ka Halwa (Step-by-Step)

1. Prepare Dates Mixture

  • Soak dates in ½ cup warm milk for 15 minutes.

  • Grind into a smooth paste and set aside.

2. Sauté the Carrots

  • Heat 2 tbsp ghee in a pressure cooker.

  • Add chopped or grated carrots and dry fruits.

  • Sauté for 2 minutes, then continue cooking for 10 minutes until carrots release water.

3. Pressure Cook the Carrots

  • Pour in ¾ cup milk and mix well.

  • Close the lid and pressure cook for 2 whistles.
