Lucknowi Mutton Biryani is a rich and flavorful dish that is loved by many. This dish has a long and interesting history that dates back to the Mughal era in India. It is said that the Mughals brought the biryani to India from Persia, and it was in Lucknow that the dish was perfected and given its unique flavor.
The city of Lucknow in northern India was known for its Nawabs (rulers) who were famous for their love of good food and luxurious lifestyle. They were known to be great patrons of the arts and culture, and this included food. The Nawabs of Lucknow were instrumental in refining the biryani, and it was during their reign that the Lucknowi Mutton Biryani became famous.
Ingredients for Lucknowi Mutton Biryani Masala
- 1 cinnamon stick
- 8-10 cloves
- 2-3 tsp cumin seeds
- 1 tsp fennel seeds
- 2-3 tsp coriander seeds
- 1 tsp pepper corns
- 2 star anise
- 2-3 mace
- 2-3 brown cardamom
- 3-4 green cardamom
Method for Masala Preparation:
Dry roast the spices until they are fragrant and then transfer them to a masala grinder for fine grinding.
Ingredients for Mutton marination:
- 1/2 kg mutton
- 2-3 tsp. ginger-garlic paste
- 1 tsp turmeric
- 1 tsp chilli powder
- Cashew nut paste
- Pinch of garam masala
- 4-5 tsp. curd
Method for Mutton marination:
For 500 grams of mutton, mix in ginger-garlic paste, turmeric, and chili powder. Add cashew nut paste, garam masala, and curd, and whisk until well combined. Cover it with a lid and rest it for an hour.
Ingredients for Final Biryani Preparation:
- 2-3 tsp salt
- 3 tsp ghee
- 2-3 tsp oil
- 2-3 cups milk
- Saffron
Method for Final Preparation:
Bring the meat and season it with salt. Apply ghee and oil on the handi and transfer the marinated meat from the bowl to the handi. Cook the meat for a few minutes by stirring it. After that, put the lid on and simmer it for around 30 minutes. Now, layer the cooked rice over the mutton and drizzle some saffron-flavored milk over it. Add ghee, roasted onions, salt, and garam masala on top of it. Cover the handi with the lid and put something heavy on it. Cook it on low flame for about 30 minutes. Serve it hot.
