Ingredients:

  • 1 cup of chana dal (split chickpeas)
  • 1/2 cup of finely chopped onion
  • 1-2 green chilies, finely chopped
  • A small piece of ginger, finely chopped
  • A few curry leaves, chopped
  • 1/2 tsp fennel seeds
  • Salt, to taste
  • Vegetable oil, for frying

Instructions:

  • Wash and soak the chana dal in water for 2-3 hours. Drain the water and grind the dal into a coarse paste without adding water.
  • Add chopped onion, green chilies, ginger, curry leaves, fennel seeds, and salt to the dal paste. Mix well.
  • Heat oil in a pan for deep frying.
  • Take small portions of the dal mixture and shape them into flat discs or small balls.
  • Fry the vadas in hot oil until they turn golden brown and crispy.
  • Remove from oil and place on a paper towel to absorb excess oil.
  • Serve hot with chutney or sauce of your choice.
