Here's a Malpua recipe for you to try at home:
Ingredients:
- 1 cup all-purpose flour (maida)
- 1/4 cup semolina (sooji)
- 1/4 cup desiccated coconut (nariyal ka burada)
- 1 cup milk
- 1/2 cup sugar
- 1/4 teaspoon green cardamom (choti elaichi) powder
- Oil or ghee for frying
For the syrup:
- 1 cup sugar
- 1/2 cup water
- 1/4 teaspoon green cardamom (choti elaichi) powder
Instructions:
- In a mixing bowl, combine all-purpose flour, semolina, desiccated coconut, sugar, and green cardamom powder. Mix well.
- Gradually add milk to the dry ingredients and whisk to form a smooth batter. Make sure there are no lumps in the batter.
- Heat oil or ghee in a deep frying pan on medium heat.
- Using a ladle, pour a small amount of batter into the pan to make a small disc. Fry until golden brown on both sides.
- Once the malpuas are cooked, remove them from the pan and set them aside on a paper towel to absorb the excess oil or ghee.
- In a separate pan, combine sugar, water, and green cardamom powder. Cook over medium heat until the sugar dissolves and the syrup thickens slightly.
- Dip each malpua in the syrup and let it soak for a minute or two.
