  • 1/4 cup semolina (sooji)

  • 1 cup milk

  • 1/2 cup sugar

  • 1/4 teaspoon green cardamom (choti elaichi) powder

  • Oil or ghee for frying

For the syrup:

  • 1 cup sugar

  • 1/2 cup water

  • 1/4 teaspoon green cardamom (choti elaichi) powder

Instructions:

  • In a mixing bowl, combine all-purpose flour, semolina, desiccated coconut, sugar, and green cardamom powder. Mix well.

  • Gradually add milk to the dry ingredients and whisk to form a smooth batter. Make sure there are no lumps in the batter.

  • Heat oil or ghee in a deep frying pan on medium heat.

  • Using a ladle, pour a small amount of batter into the pan to make a small disc. Fry until golden brown on both sides.

  • Once the malpuas are cooked, remove them from the pan and set them aside on a paper towel to absorb the excess oil or ghee.

  • In a separate pan, combine sugar, water, and green cardamom powder. Cook over medium heat until the sugar dissolves and the syrup thickens slightly.

  • Dip each malpua in the syrup and let it soak for a minute or two.

Serve hot and enjoy your delicious Malpua!
