Cooking the chickpeas with bicarbonate of soda to soften their skins and mellowing the garlic by boiling it alongside them. This technique ensures a rich, velvety hummus with a subtle garlic flavor, perfect for scooping up with warm pitta bread. Whether you're hosting friends or simply treating yourself, this hummus is a game-changer.

Ingredients

  • 400g tin chickpeas, drained and rinsed
  • ½ tsp bicarbonate of soda
  • 2 garlic cloves
  • 3 garlic cloves, finely sliced
  • 2 tbsp fresh lemon juice
  • 75g (2¾oz) tahini
  • ½ tsp salt, plus extra if needed
  • Warm pitta breads, to serve (optional)
  • 30g (1oz) butter
  • 1 tsp smoked paprika

Method

  1. Cook the Chickpeas: Place the chickpeas in a saucepan and cover with cold water. Add the bicarbonate of soda and garlic cloves, then bring to a boil. Let them cook for 15–20 minutes until the chickpeas are very soft. Drain, reserving some of the cooking liquid.

  2. Blend to Perfection: Transfer the chickpeas and garlic to a food processor. Add the lemon juice and blend on high speed. Slowly drizzle in the tahini while blending continuously. For an ultra-smooth texture, add a little reserved cooking liquid as needed. Season with salt to taste and allow the hummus to cool.

  3. Prepare the Topping: Melt the butter in a saucepan over medium heat. Add the sliced garlic and sauté for 2–3 minutes until it turns golden brown. Stir in the smoked paprika and cook for another minute.

  4. Assemble and Serve: Spoon the hummus into a serving bowl and drizzle the warm, aromatic topping over it. Serve with warm pitta bread for dipping.
