As per the famous Moroccan traveler, Ibn Battuta, kebab was an essential component of the daily diet of Indian royalty as early as 1200 AD. It's no surprise that even before the Mughals arrived, Afghan raiders and invaders had introduced kebab to Indian cuisine. The kebab made before the Mughal era was mostly characterized by rustic, chewy chunks of meat marinated and grilled in open ovens. However, with the arrival of the Mughals, kebab transformed into a more refined delicacy. It became softer, more succulent, and richer in flavor with the addition of aromatic spices and dry fruits.

Chicken kebab is a popular dish that consists of marinated chicken pieces grilled on skewers. Chicken kebab is often served with a variety of sides, such as rice, salad, or pita bread, and can be enjoyed as a main dish or as a delicious appetizer. It is a favorite in many countries and cultures and is known for its savory and aromatic flavors.

Not only is chicken kebab delicious, but it is also a good source of protein and other essential nutrients. It can be made with various cuts of chicken, including breast, thighs, and legs, making it a versatile and budget-friendly meal option

Ingredients:

  • 1 pound boneless, skinless chicken breast, cut into 1-inch cubes

  • 1 red onion, cut into 1-inch chunks

  • 1 green bell pepper, cut into 1-inch chunks

  • 1/4 cup olive oil

  • 1/4 cup plain yogurt

  • 2 tablespoons lemon juice

  • 2 cloves garlic, minced

  • 1 tablespoon paprika

  • 1 teaspoon ground cumin

  • 1/2 teaspoon dried oregano

  • Salt and pepper, to taste

  • Skewers

Instructions:

  • In a large bowl, whisk together olive oil, yogurt, lemon juice, garlic, paprika, cumin, oregano, salt, and pepper.

  • Add the chicken to the bowl and toss to coat. Cover the bowl with plastic wrap and refrigerate for at least 1 hour or up to 24 hours.

  • When you're ready to cook, preheat a grill to medium-high heat.

  • Thread the chicken, red onion, and green bell pepper onto skewers.

  • Grill the kebabs, turning occasionally, until the chicken is cooked through and the vegetables are slightly charred, about 10-12 minutes.

  • Remove the kebabs from the grill and let them rest for a few minutes before serving.

Serve the chicken kebabs with rice, salad, or pita bread, and enjoy!
