Ingredients:
- 1 medium-sized cauliflower
- 2 medium-sized potatoes
- 2 medium-sized onions
- 2 medium-sized tomatoes
- 1 tablespoon ginger paste
- 1 tablespoon garlic paste
- 1 teaspoon cumin seeds
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon garam masala powder
- Salt, to taste
- Oil, for cooking
- Fresh coriander leaves, for garnishing
Instructions:
- Cut the cauliflower into small florets and peel and cut the potatoes into small pieces. Rinse them and keep aside.
- Heat 2-3 tablespoons of oil in a pan on medium heat. Once hot, add cumin seeds and let them crackle.
- Add the chopped onions and sauté until they turn translucent. Add the ginger-garlic paste and cook for 1-2 minutes.
- Add the chopped tomatoes and sauté until they turn mushy.
- Add the cauliflower and potatoes, along with turmeric powder, red chili powder, and salt. Mix well.
- Cover the pan and let it cook on low heat for 15-20 minutes, or until the vegetables are cooked through.
- Add garam masala powder and mix well. Cook for an additional 2-3 minutes.
- Garnish with fresh coriander leaves and serve hot with roti, naan, or rice.
