Keema Samosas- a popular Indian snack that features a crispy pastry shell filled with a savory keema of ground lamb and aromatic spices
Ingredients:
- 1 pound ground lamb
- 1/2 cup chopped onion
- 1/2 cup chopped tomato
- 1 tbsp minced ginger
- 1 tbsp minced garlic
- 2 green chilies, chopped
- 1 tsp cumin seeds
- 1 tsp coriander seeds
- 1 tsp garam masala
- 1/2 tsp turmeric powder
- 1/2 tsp red chili powder
- 1/2 tsp salt (or to taste)
- 1/4 cup chopped cilantro
- 12 samosa wrappers
- Water (as needed)
- Oil (for frying)
Instructions:
- Heat oil in a pan over medium-high heat. Add cumin seeds and coriander seeds, and let them crackle for a few seconds.
- Add chopped onions and sauté until they turn golden brown.
- Add minced ginger and garlic, and sauté for a minute.
- Add chopped tomatoes, green chilies, garam masala, turmeric powder, red chili powder, and salt. Mix everything together and cook until the tomatoes turn soft and mushy.
- Add the ground lamb to the pan and mix well. Cook the meat until it is browned and fully cooked.
- Stir in chopped cilantro and remove the mixture from heat. Allow it to cool.
- Take a samosa wrapper and cut it in half lengthwise. Fold the cut edge over to form a cone shape and seal the edge with water.
- Fill the cone with the meat mixture and seal the top edge with water.
- Heat oil in a deep frying pan or kadhai on medium-high heat.
- Carefully drop the samosas into the hot oil and fry until they turn golden brown.
- Remove the samosas with a slotted spoon and place them on paper towels to remove excess oil.
- Serve the Keema Samosas hot with chutney or ketchup.
