Palak paneer is a classic vegetarian dish from India that features spinach (palak) and paneer (a type of Indian cheese). The spinach is cooked with aromatic spices like cumin, coriander, and garam masala, then blended into a creamy sauce that's studded with cubes of golden-fried paneer. It's a delicious and nutritious dish that's perfect for a hearty dinner or lunch.
Ingredients:
- 1 pound fresh spinach leaves, washed and chopped
- 1 tablespoon vegetable oil
- 1 tablespoon butter
- 2 medium onions, sliced
- 3-5 cloves garlic
- 1-inch piece of ginger
- 2 green chilies
- 1 and 1/2 teaspoons cumin seeds
- 1/2 teaspoon turmeric powder
- 2 teaspoon coriander powder
- 2-3 black pepper
- 2 cloves
- 2 green cardamom
- 1 Black cardamom
- 1-star anies
- 1/4 teaspoon garam masala powder
- 1/2 teaspoon or as per taste salt
- 1/2 cup water
- 1 cup paneer, cut as per choice
- 2 tablespoon cups fresh cream
- 1 teaspoon kasturi methi
Instructions:
- Take garlic, ginger, green chilies, cumin, black pepper, cloves, and green cardamon in a mixture jar and grind fine.
- Blanch spinach in boing water for about 2-3 min and strain it to soak in ice water to retain the spinach color. Once cooled down make puree out of it.
- Heat the oil and butter in a pan over medium heat. Add the cumin seeds and let them sizzle for a few seconds.
- Add the chopped onions, and cook for a few minutes until the onions are brown, add the grinded masala, and saute well until raw smell over.
- Add turmeric powder, coriander powder, and salt. Stir well to combine and cook for another 2 minutes.
- Add the spinach puree and cook for 5-7 minutes until it separates the oil.
- In a separate pan, fry the paneer cuts until they are golden brown on all sides.
- Add the fried paneer cubes to the spinach mixture and stir gently. Cook for another 2-3 minutes.
- Add 1/2 cup water and mix well. Bring the mixture to a boil and then reduce the heat to low. Cover and simmer for 10-15 minutes.
- Add the fresh cream, and garam masala powder and stir well. Cook for another minute or two and end up with roasted Kasturi methi.
Serve hot with rice or naan. Enjoy your delicious palak paneer!
