Easy-to-Make Karela Paratha Recipe

For dough

  • 1 ½ cup. Whole wheat flour
  • Salt to taste
  • Water as required
  • 1 tsp Ghee/olive oil

For filling

  • 1 medium-sized Bitter Gourd- washed, peeled, finely chopped and mix with 1 tsp of salt
  • 2 tbsp mashed potatoes (optional)
  • Salt to taste
  • ¼ tsp. Garam masala powder
  • 1 tsp Cumin seeds
  • 1-2 green chilies finely chopped
  • 1 tbsp Coriander powder
  • ¼ tsp Turmeric powder
  • ½ cup Onions finely chopped
  • ½ tsp Ginger-garlic paste
  • ½ cup dry coconut-grated

Karela Paratha filling preparation

  • Remove the excess moisture and bitterness from the chopped and salted karela (bitter gourd) and set it aside.
  • In a pan, heat oil and add cumin seeds, green chilies, onions, ginger-garlic paste, and grated coconut. Fry them until they become fragrant and turn golden brown. Add salt, turmeric, coriander, and garam masala.
  • Next, add the squeezed and dried karela to the pan and continue cooking until the karela is fully cooked. If desired, you can add a tablespoon of mashed potatoes to help bind the mixture together.

Paratha Preparation

  • Start by preparing the dough for the parathas. In a mixing bowl, combine wheat flour, a pinch of salt, and a tablespoon of oil. Gradually add water and knead the mixture to form a smooth dough. Cover it and let it rest for about 20 minutes.
  • Take two small portions of the dough and roll them into small circular rotis. Place the filling in between the rotis and roll them out to form the paratha. Repeat this process to make more parathas.
  • Heat a tawa or griddle over medium heat. Place the rolled paratha on the heated tawa and cook it until small bubbles appear on the surface. Flip the paratha and apply some oil or ghee on top. Cook until both sides are golden brown.
  • Remove the cooked paratha from the tawa and repeat the process with the remaining parathas.
  • Serve the delicious Karela Parathas hot with yogurt, pickle, or any side dish of your choice.
