Easy-to-Make Sabudana Vada Recipe

Ingredients

  • 1 cup tapioca, soaked
  • 2 large boiled and mashed potatoes
  • 1 1/2 inch ginger, finely chopped (optional)
  • 4 green chilies, finely chopped
  • 10-12 curry leaves, chopped
  • 1/2 cup roasted peanuts, ground
  • 1 teaspoon cumin seeds
  • Salt to taste
  • 1/2 tablespoon yogurt
  • 1/4 cup fresh cilantro, chopped
  • A pinch of baking soda
  • Oil for frying

For sweet yogurt:

  • 1 cup yogurt, beaten
  • 1 1/2 tablespoon sugar
  • A pinch of salt
  • 1 small raw mango, peeled, grated

For garnish:

  • Yogurt
  • Red chili powder
  • Coriander chutney

Process For Making Sabudana Vada

For soaked tapioca:

  1. First, wash the tapioca thoroughly.
  2. Then, soak it in 3/4 cup of water for 6-8 hours.

For sweet yogurt:

In a bowl, combine yogurt, sugar, salt, and mashed raw mango. Mix well until thoroughly combined.

For vada:

  • In a bowl, combine soaked tapioca, mashed potatoes, chopped ginger, green chili, curry leaves, crushed peanuts, cumin seeds, salt to taste, yogurt, fresh coriander, and baking soda. Mix everything well and knead into a dough.
  • Heat oil in a deep pan for frying and keep another bowl of water nearby. Take small portions of the dough and shape them into small, round discs, making a hole in the center.
  • Fry these discs in medium-hot oil until they turn golden brown on both sides.
  • Remove excess oil by placing the fried vadas on absorbent paper.
  • Serve hot with sweet yogurt.
