Traditional Indian sweet gujiya recipe

Gujiya is a traditional Indian dessert that is commonly prepared during festivals like Holi and Diwali. It is a sweet dumpling made with a crispy outer crust and a delicious filling of sweetened khoya (milk solids), nuts, and aromatic spices.

Ingredients:

  • 2 cups all-purpose flour
  • 1/4 cup rawa
  • 4 tbsp ghee
  • A pinch of salt
  • 1/2 cup water
  • 1 cup khoya/mawa
  • 1/2 cup powdered sugar
  • 1/4 cup chopped mixed nuts (almonds, cashews, pistachios, and raisins)
  • 1 tsp cardamom powder
  • Oil or ghee for deep-frying

Instructions:

  • In a large mixing bowl, add the flour, rawa, lukewarm ghee, and salt. Mix well.
  • Add water gradually and knead the dough until it becomes soft and pliable.
  • Cover the dough with a damp cloth and let it rest for 30 minutes.
  • In a separate mixing bowl, crumble the khoya and mix in the powdered sugar, chopped nuts, and cardamom powder. Mix well to form a thick paste.
  • Divide the dough into small lemon-sized balls.
  • Roll out each ball into a small circle of about 4 inches in diameter.
  • Add a tablespoon of the khoya filling on one side of the circle.
  • Fold the other half of the circle over the filling and seal the edges by pressing them together.
  • You can use a gujiya mold or use a fork to crimp the edges.
  • Heat oil or ghee in a deep pan for deep-frying.
  • Gently slide the gujiyas into the hot oil or ghee and fry until golden brown on both sides.
  • Drain the excess oil by placing them on a paper towel.
  • Serve hot or at room temperature.
