Shahi Paneer is a popular North Indian dish, It is made with paneer, and a rich, creamy tomato-based sauce that is flavored with aromatic spices. The dish is traditionally made with ghee and is very popular in north India. Try this at home with this easy-to-make shahi paneer recipe 

For Onion Tomato Puree

  • 1 tbsp ghee
  • 1 tsp cumin seeds
  • 1 inch cinnamon
  • 2 cloves
  • 2 green cardamom
  • 1 black cardamom
  • 1 bay leaf
  • 2 green chili
  • 1 inch ginger, cut into cubes
  • 3-4 garlic, roughly chopped
  • 2 medium onion, cut into quarter
  • 10-12 cashew nuts, soaked
  • 4 medium tomato, cut into quarter
  • Salt to taste
  • ¼ tsp turmeric

For Final Prepration

  • 2 tbsp butter
  • 1 tbsp kashmiri red chili powder
  • 1 tsp coriander powder
  • Prepared Puree
  • 250 gms paneer, cubed
  • ¼ cup cream
  • 1 tsp kasoori methi, crushed

Process

  • To make Shahi Paneer, start by heating ghee in a kadhai or wok. Add whole spices, green chillies, ginger, and garlic and sauté for a minute. Next, add chopped onions and cashew nuts and sauté until the onions turn translucent, being careful not to brown them.
  • Now, add chopped tomatoes, salt, and turmeric powder and mix well. Cook covered on low heat for 12-15 minutes until the tomatoes are soft and mushy. Allow the mixture to cool down before transferring it to a blender and blending it until you get a smooth texture.
  • Once blended, strain the curry through a fine mesh strainer to get a smooth and silky texture. Heat butter in a non-stick pan and add kashmiri red chilli powder and coriander powder. Sauté for a minute and then add the prepared curry. Stir gently for a while and then add paneer cubes, cream, and kasoori methi powder. Mix well and cook for another 2 minutes on low heat.

Before serving, garnish with cream and sprinkle cardamom powder. Enjoy your homemade Shahi Paneer with rice or Indian bread
