The chef has brought with him 80 kilograms of Indian spices and pickles to ensure an authentic Indian flavor in his preparations. The menu will feature regional specialties from various parts of India, such as Tungrymbai, a dish from Meghalaya made with smoked and fermented soya beans, accompanied by Putharo, a traditional bread from the region, and smoked tomato chutney. Another highlight will be a pepper fry from Tamil Nadu.

In line with the United Nations' declaration of 2023 as the International Year of Millets, Sadhu plans to incorporate millets-based dishes in his menu. This includes a Millet Thoran from Kerala, a millet pulao with Malvani-style Sole Fish (a French delicacy), and Potato Koshimbir, a Marathi salad. The dessert selection will feature delights like Bengali Sandesh, Maharashtrian Chikki, and Mysore Pak, served with Kashmiri Kahwa and locally sourced coffee from Karnataka.
